Strawberry Swirl Cheesecake Recipe

Strawberry Swirl Cheesecake

This makes a beautiful cheesecake. The swirl is made by adding fresh strawberry puree to half of the batter and then swirling the two batters together with a vertically held knife.

You can enjoy this as it is or top it with more strawberries.

For the crust:

2 1/2 cups graham cracker crumbs
2 tablespoons granulated sugar
1/4 cup butter, melted

For the filling:4 8-ounce packages cream cheese
1 cup granulated sugar
4 large eggs
2 tablespoons all-purpose flour
1/2 tablespoon vanilla extract
1/4 cup heavy cream
1 cup fresh strawberry puree
three drops red food coloring

1. Preheat the oven to 325 degrees. Combine crumbs, sugar, and butter in a 10-inch springform pan. Form the crust by pressing the crumbs evenly over the bottom of the pan and half way up the sides of the pan. Bake the crust for seven or eight minutes. Set aside to cool.

2. In a stand-type mixer and with the paddle attachment, beat the cream cheese, sugar and vanilla together. Add the cream and flour. Mix until fluffy. Mix in eggs, one at a time, until well incorporated.

3. Divide the cream cheese filling into two parts. Add the strawberry puree and food coloring to one-half of the filing and mix well. Pour the pink filling into the cooled crumb crust. Spoon the white filling onto the pink filling in bands. Swirl with a vertically-held knife to create a marble effect.

4. Bake at 325 degrees for 65 minutes or until done. Remove the cheesecake to cool on a wire rack. After five minutes, carefully remove the pan ring. Refrigerate the cheesecake to chill well before serving.

Baker's notes:

We used AmeriColor professional food color gels to tint the strawberries a deep, bright red. The resulting batter was a bright pink. If you are using other colors, you may need to add more coloring.

If you wish to top the cheesecake with additional strawberries, add two tablespoons granulated sugar to one cup of sliced strawberries and toss. Let sit for about fifteen minutes and the sugar will draw some of the juices from the berries.

Triple Chocolate Cheesecake Recipe

Chocolate-Glazed Triple Layer Cheesecake

Yield: 1

Ingredients

8 1/2 oz chocolate wafer cookies; crushed (about 2)
3/4 c sugar; divided
1/4 c + 1 t. butter; melted
16 oz cream cheese; softened and
1 ; divided
3 eggs; divided
1 ts vanilla; divided
2 oz semisweet chocolate; melted
1 1/3 c sour cream; divided
1/3 c dark brown sugar; firmly packed
1 tb flour; all-purpose
1/4 c pecans; chopped
5 oz cream cheese; softened
1/4 ts almond extract
1 chocolate glaze; (separate recipe)
1 chocolate leaves; (optional)

Instructions

Combine cookie crumbs, 1/4 c. sugar & butter in med. bowl; blend well. Press into the bottom and 2" up sides of 9" springform pan. Set aside. Combine 1 (8 oz) pkg. cream cheese & 1/4 sugar; beat until fluffy. Add 1 egg and 1/4 tsp. vanilla; blend well. Stir in melted chocolate and 1/3 c. sour cream. Spoon over chocolate crust. Combine remaining 8 oz pkg cream cheese, brown sugar and flour; beat until mixture is fluffy. Add 1 egg and 1/2 tsp. vanilla; blend well. Stir in pecans. Spoon gently over chocolate layer. Combine 5 oz cream cheese and remaining 1/4 c. sugar; beat until fluffy. Add egg; blend well. Stir in remaining 1 c. sour cream, 1/4 tsp. vanilla and almond extract. Spoon gently over praline layer.

Bake at 325 degrees for 1 hour; turn off oven and leave cheesecake in oven for 30 minutes; open door of oven and leave cheesecake in oven an additional 30 minutes. Cool. Chill 8 hours. Remove from pan. Spread warm chocolate glaze over cheesecake. Garnish with chocolate leaves, if desired. Yield: 10-12 servings.

Philidelphia Cheesecake Recipe

Philadelphia 3-Step Triple Chocolate Layer Cheesecake

Yield: 8 Servings

Ingredients

1 no ingredients

Instructions

2 pk (8 oz each) Philadelphia cream cheese; softened
1/2 c sugar
1/2 ts vanilla
3 sq Baker's Semi - Sweet Baking
Chocolate; melted, cooled slightly
4 sq Baker's Premium White Baking
Chocolate; melted, cooled slightly
1 ea chocolate flavor crumb crust (9 in)

Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs and mix until blended. Stir melted semi-sweet chocolate into 1 cup of the batter. Stir melted white chocolate into remaining plain batter. Pour semi-sweet chocolate batter into crust. Top with white chocolate batter.Bake at 350 for 35-40 minutes or until center is almost set. Cool. Refrigerate for 3 hours or overnight.

Pecan Pie Cheesecake Recipe

Cheesecake Pecan Pie

Yield: 8 Servings

Ingredients

8 oz cream cheese; softened
1 egg
1/3 c sugar
1 ts vanilla
1 pie shell; unbaked 9 inch
1 1/2 c pecan halves
2 eggs; slightly beaten
1/4 c sugar
2/3 c corn syrup-light
1/2 ts vanilla

Instructions

Combine cream cheese, egg, 1/3 cup sugar, and 1 teaspoon vanilla. Beat until light and fluffy. Spread over bottom of pie shell. Arrange pecans on the cream cheese mixture. Mix remaining eggs, sugar, corn syrup, and vanilla, stirring well. Carefully pour over the pecans. Bake at 375 degrees for 40 to 45 minutes or until done.

Key Lime Cheesecake

Description:
The richly decadent sweet and tart of Key Limes in a creamy mouth watering cheesecake. Forget the pie, grab this instead!!

Serves/Makes:12 slices

Ingredients

* 1-3/4 cups (425 ml) graham cracker crumbs
* 5 tbsp (70 ml) butter, melted
* 1 cup (225 ml) plus 1 tbsp (15 ml) granulated sugar
* 3 8 oz (224 grm). packages cream cheese, softened
* 1 tsp (5 ml) vanilla
* 1/4 cup (60 ml) fresh or bottled key lime juice (If using fresh green limes or juice, use 1/2 Cup).
* 3 whole jumbo eggs (or 4 large eggs)
* Garnish: sweetened whipped cream
* Optional garnish: candied lime peel julienned strips

Preparation

* Preheat oven to 350 degrees (175 C.).
* Combine crumbs, butter and 1 tbsp (15 ml) sugar in a bowl.
* Stir well to coat all crumbs.
* Press the crumbs onto the bottom and about half way up the sides of an 8" springform pan.
* Bake crust for 5 minutes and set aside.
* In large deep mixing bowl combine cream cheese, 1 cup (225 ml) sugar and the vanilla; beat until smooth.
Add key lime juice and eggs and continue to beat until smooth and creamy.
Pour filling onto baked crust.
Bake for 60 to 70 minutes.
If top turns light brown, it's done.
Remove from the oven and cool until it reaches room temperature.
Place in the fridgerator to chill.
When chilled, remove the springform pan sides and cut.
Serve with sweetened whipped cream and the lime strips is used.

Comments
Hint: To avoid cheesecakes from having their tops crack while baking, it is useful to put a pan of hot water, like a 9 x 13 cake pan in the oven under the springform pan.

Note: This recipe was sent to me by a friend with a big encouragement to try it out and think about it for our family Easter Dinner. It is the best mouth experience we have had. It will be a standard dessert around here forever!

Low Carb Pumpkin Cheesecake Recipe

Lindy'S Low Carb Cheesecake

Yield: 16 Servings

Ingredients

Filling:
2 1/2 lb cream cheese
1 1/4 c Splenda (or equivalent)
3 tb flour
1 1/2 ts grated orange rind
1 1/2 ts grated lemon rind
1/4 ts vanilla extract
5 whole eggs
2 whole egg yolks
1/4 c heavy cream

Instructions

1. Prepare crust by combining nuts, sugar, lemon rind and vanilla. Make a well in centre and add egg yolk and butter. Work together quickly with hands until well blended. Wrap in waxed paper and chill thoroughly in refrigerator, about 1 hour.

2. Prepare filling by combining cheese, sugar, flour, grated orange and lemon rind and vanilla. Add eggs and egg yolks, one at a time, stirring after each addition. Stir in cream. Set aside.

3. Preheat oven to 400 degrees F. Butter bottom and side of a 9-inch spring-form pan.

4. Put crust mixture into the spring-form pan and spread it out over bottom of pan. Crust should completely cover bottom of pan. Bake for 20 minutes. Cool.

5. When the pan has cooked slightly butter the sides of the pan.

6. Fill the pan with the cheese mixture. Bake in a 450 degree over for 12 to 15 minutes. Reduce temperature to 200 degrees and continue baking one hour. Remove from pan and cool completely.

7. To serve, loosen pastry from side of pan with a spatula. Remove side of spring-form pan. Cut cheesecake into wedges.

Per serving: 401 Calories (kcal); 39g Total Fat; (85% calories from fat); 10g Protein; 5g Carbohydrate; 197mg Cholesterol; 289mg Sodium Food Exchanges: 0 Grain(Starch); 1 1/2 Lean Meat; 0 Vegetable; 0 Fruit; 7 Fat; 0 Other Carbohydrates

NOTES : Based on cheesecake recipe from Lindy's Restaurant in NYC. Each slice has 12g carb so it is *not* an induction food.
