Vegan Cheesecake

Yield: 8 Servings

Ingredients

1 8 graham cracker crust, unbaked
1 lb tofu,
1/2 c brown sugar
1/3 c honey or syrup
1/4 c oil
2 tb lemon juice
1 tb unbleached white flour
1 ts vanilla
1 pinch of salt

Instructions

Preheat oven to 350 degrees.

Blend all ingredients except the crust in a food processor until smooth and creamy. Pour into the unbaked pie shell and bake for about 45 minutes or until cracks start to form around the edge of the filling.
